Favourite Family Recipe

My Mum was a great cook, and she sadly passed away earlier this year. Rather than making a Christmas cake, she used to make a cake with mince (like that used in mince pies) it was gorgeous, she always had to make at least two as the first one never even got to cool done, we used to eat it straight away. I wish I had the recipe.

Thank you, unfortunately it's close but not the one as there was no crumble. I think it must have been a hybrid, as it has cherries and other fruit in it. But I will give this a try as it sounds nice 🙂

beccatavender the one below is different. I just googled mincemeat cake and there are quite a few.

INGREDIENTS YOU’LL NEED TO MAKE THIS MINCEMEAT LOAF CAKE

Butter

Soft Light Brown Sugar

Eggs

Self Raising Flour

Mincemeat – homemade or shop bought.

Sultanas

Glace Cherries

Whole Almonds and Glace cherries for the topping, optional

HOW TO MAKE A MINCEMEAT LOAF CAKE

Place all the ingredients in a large bowl (or the bowl of a stand mixer.)

Beat the ingredients together for 2 minutes or until the batter is well combined and smooth. Don’t beat the mixture too much – overbeating can cause the cakes to sink in the middle.

Spoon the mixture into greased and lined loaf tins. Smooth the tops and place whole almonds and glace cherries on top of the cakes to make a pretty decoration if you like.

Bake for about 1 hour for the larger cakes and 40-45 minutes for the minis.

beccatavender you're welcome I might give it a go myself. Usually I make dozens of mince pies but I hear there is a mincemeat shortage this year!

Sad to hear that mum passed away 😔

My mother has always sucked at cooking and that's why I started cooking for the family at 15.

I love my mum dearly, but she's still no good in the kitchen (Just ask my dad)

My stepmum was like that. Steamed suet bacon pudding with lumps of bacon fat, roast potatoes that oozed fat when you stabbed with the fork, stews, casseroles with no onion, carrots or parsnips etc as dad didn't like root veg. Yuk, childhood memories.

My bio mum was a great cook and made pies, stews with fluffy dumplings, lovely cakes.
