Healthy Filling Meals

Ask a Question

I’m currently 37 weeks pregnant with a very large baby boy, who has me starving at all times... recently I’ve found the only meals I can have that are filling enough to get me through the night is pasta dishes... I would love to be eating salads and being all healthy, but it’s just not enough food!

Anyone have any ideas of healthy but filling meals?

I find meals like sausage and mash and stir fry dishes are really filling and easy to make, and you can make them healthy! Also either baby potatoes/homemade chips or jacket potatoes could be a good idea 🙂

I just made plain rice cooked on the hob in saltwater and chicken in curry sauce. Then put one spatula of rice on a plate and then a spatula of chicken in curry sauce. Very yummy and filling and has nutritional value in it. I would recommend a variety of chicken dishes as it's very healthy and have a side of salad.

Why not try dishes with legumes such as kidney, pinto, cannellini, chickpeas. I batch cook and make a 3 bean chilli that always keeps me satisfied.

Recipe as follows:

3 Bean Chilli – Serves 4

1 large onion, chopped

2 cloves garlic (or 1 tsp garlic paste)

2 Jalapenos, seeds removed and chopped (keep seeds if heat required)

3 tbsp chilli powder

1 tsp chipolte powder

1 can (15oz) black beans, drained and rinsed

1 can (15oz) kidney beans, drained and rinsed

1 can cannellini beans (15oz), drained and rinsed

1 tbsp cocoa powder (or a small piece of dark chocolate, optional

360 ml of water or vegetable stock

Salt and pepper to season

Garnish with onions, sliced, plant-based plain yoghurt and lime wedges.

Method

  1. Heat the oil (or water) and saute the onion for 5 minutes until translucent.
  2. Add the jalapenos, chilli, chipolte power and cook for a minute, or until fragrant.
  3. Add the beans, tomatoes, cocoa powder (or chocolate) and stock (or water) and bring to the boil. Reduce heat, cover and simmer for 15 minutes. Season with salt and pepper.

I am the same, salads just don’t fill me up!!

Try adding some new potatoes to your salad and have it with proteins such as salmon and chicken. x

Try making a tasty veg soup, add some chilli powder or curry powder to taste.
