Well, Portugal is kinda near to UK (via air plane) so that's a country where it's usually sunny and even when it's cold, it's nowhere near as bad as it is in UK.

Andorra's fantastic if you want a snowy-themed country.

Spain more for variety of meats.

Note: You'll need to have your own method of transportation (e.g. car) otherwise you'll have a hard time getting anywhere. Unless you always use taxis which becomes expensive in no time.

Canaries, cape verde, thailand or anywhere near there the weather will be great! Good luck
