New Year, New Healthy Eating, Let's Have some Recipes

Have given update on 'New Year, New Me' but hope we can come up with some recipes that are tasty but healthy.

For first meal I have greek yoghurt (which i couldnt stomach before) mixed with seeds, chopped walnuts, cinnamon and blueberries which are a superfruit.

Today I found a sachet of Old el Paso chilli mix in cupboard and have cooked per instructions with mince, onions and added my own few ingredients: 3 finely chopped leftover mushrooms, lentils (read instructions) and it is now simmering away in crockpot. Later I will add a tin of low salt and sugar baked beans with the sauce drained away.

Lentils are extremely good for you but if you dont like them add to stews, curries and chilli you wont even taste them. They are cheap and will add bulk and along with the beans will make the meal go a lot further. The beans were 40p in sainsburys yesterday. Kids probably wont even notice the lentils if they are fussy.

I would say the majority of the meals we eat in our house are healthy. I've tried using lentils before in beef mince dishes but my husband noticed there was a different texture and he didn't like it. There are always lots of fruit and veg in the house and we try not to snack unless it is something healthy but occasionally have a treat.

I use 10% beef mince as healthier than 25%, although it is more expensive so not an option for everyone. I've found that pork mince is good as its either 15% or 5% and it seems to be cheaper than beef. Having smaller portions is a good option too, means there are leftovers for lunch the next day. I also look at the fat content on items not just the calories.

MrsCraig that's really good. I use 5% mince even though tv chefs say to use 15 or 20 for flavour, but with chilli there is plenty of flavour lol. I don't notice the lentils in stews etc but I do notice pearl barley and it tends to be similar to tapioca when cooked. Not too bad with just a small amount.

Lynibis strangely enough he preferred the pearl barley in the mince over the lentils. Our son didn't notice at all, he just ate it.

MrsCraig ha ha he's obviously not a picky child. I tried the pearl barley in a stew which was runnier than maybe a curry or chilli, I would use it again, maybe just a little less.

Lynibis our son will eat pretty much anything put in front of him. There are one or two things he doesn't like but he is pretty good when it comes to food. I mainly keep the lentils and pearl barley for soups now.

A good one I like to use to get some lentils in us is the Schwartz Nadia smoky meatballs sachet. Just add meatballs/ chopped onion, tin of chickpeas and tinned tomatoes.

Also asda have 2 Salmon fillets at £3 at mo. So thats our dinner tomorrow ill serve with roasted sweet potatoes, peppers & courgettes. I'll just pop a bit sweet chilli on the salmon.

Not one chocolate eaten today yet there are plenty unopened. Today for dessert just a bowl of fresh raspberries. This won’t last.

Pjran self fulfilling prophecy? It depends on how long you want it to last. There is no way I could eat a bowl of raspberries, too sour, but with yoghurt or creme fraiche not so bad. Try what I have above in first paragraph, all healthy stuff.
