Help! Potato Recipes Please!
Ask a Question
Typically my oven packed in yesterday so it will be out of action for a week.
I have a massive bag of potatoes which I can only boil or fry anyone got any decent recipes that I could do with these potatoes
At the risk of repeating myself (sorry if you already saw it) I often have to use potatoes up and I peel them, par boil some and cool in cold water, and then cook the rest and mash. I freeze the mash in single portions and put the potatoes when dry into a plastic bag with a sprinkle of flour before freezing. The spuds are lovely and crispy when cooked straight from freezer into hot fat. Sorry can't think of anything particularly new on the recipe front, just the usual cottage pies etc. But this way you have potato at the ready for many dishes.
Potato cakes. Boil, mash and add an egg and plain flour with cooked onions/mushrooms/cheese shape into 'scones' and fry with whatever meat or beans, yum yum. Multi-mash boil up with carrot, swede, sweet potato, butternut squash and freeze great as an alternative topping on shepherds or fish pie.
Definitely going to try the potato cakes, they sound yummy. I often put a layer of mashed Swede between the mince and potato in a shepherds pie, served in Pyrex dish looks colourful.
Lynibis They are yummy, crispy on the outside nice and fluffy inside. They were Mams way of making leftovers make enough to feed us, she just kept adding egg/flour until there was enough. The best ones were if there was some ham or bacon left, fried till crispy and added to 'tattie cake' served with baked beans - what more could we want.
Bossclaz My Mum had a table top cooker/hob similar to https://www.argos.co.uk/browse/appliances/small-cooking-appliances/mini-ovens/c:29574/ worked really well just plug into normal socket.
Bossclaz Hope it arrives soon. It was surprising how much Mum managed to put in the oven.
lilyflower yes got it and actually pretty good, in the summer I am going to use it outside with an extension cable.
My oven packed up the other day, ordered a new one but husband took out old one put some WD40 on the fan and now it works. Quickly cancelled order. Not much help with potato recipes. My family love mash potato with butter and cheese and then add some kind of meat and gravy.
You could use some of them in a beef stew if you have beef. Or go the indian way (dum aloo or chana aloo)
We sometimes make huevos rancheros with potatoes, spicy tomatoe & pepper sauce & eggs. Very similar to this recipe by Jamie Oliver. It's quite delicious.

You could also grate the potatoes add onion egg etc & make hash browns
I remember a recipe in a kids cookbook when I was young it was similar to this but we would bake the potato
and mash it in the skin and add the egg in the middle with cheese on top.

Thanks for all your help I have 15kg of potatoes to go through now and try out these recipes!!
If you keep the spuds well covered, out of the light,in a dark cupboard or somewhere,im sure they will last a few days, till you get a mini oven or whatever.
Also, theres par- boiling the potatoes, then you can blanche& freeze them for roasting when youve got a cooker.
