need some ideas on quick healthy meals?
not because i cant be bothered but im always so busy!
with teaching 4 kids, 1 i have to entertain, keep up with the house work and looking after 4 dogs...
hit me with inspo lol
Have you got a slow cooker as you can do it in the night before and put it on low or get everything prepped to dump it in Maslow cooker in the morning.
If so there are so many different healthy dishes you can do!
Like chicken and vegetable casserole, veggie chillie (you can make it as spicy or mild as you like) chicken with bbq sauce with added veggies.
i do! however i need to invest in a bigger one as mine feeds about 4/5 people and i have a house of 7 lol.

Pasta bake is definitely a go to for me! Very quick and easy and there are different sauces you can use to mix it up a bit!
i love a good pasta bake! i usually add chicken in there as well as its feeding 5 kids 2 adults so bulks it a bit more
HollyDolly22 You could add other things to bulk it up too, I somethings chop mushrooms and put them in to add something to it
lornaae ooo i didnt think of mushrooms. usually kids dont notice if i chop them up good either!
Have you got a chopper for veg!? That’s a god send. And if you’ve Aldi near you they have electric for sale At £10 and a manual one. But helps get all the goodness in hidden in mince and other meals etc.
ooo il have to look in to this! i always buy fresh so would come in handy as i hate chopping them
Anything you can fire in the slow cooker. I love mine and use it soooo much. The bonus is throughout the day you can smell it
i always do stews in it but i get so bored of it but ive had some amazing ideas im definitely trying!!

I love a sweet curry and she said it only takes 20 minutes and it can be frozen, so make a big pot!
ooo thank you i love sweet curry to and to my surprise my kids do to! hot stuff just leaves me with heart burn all night lol

HollyDolly22 and TiaTia Well, I don't want to put you off but it was awful! I just had it for my evening meal. I followed the recipe to the letter but all I could taste were the weird spices. I know she said Indian people do not use curry powder but I suppose our palette is more used to it. I wasn't sure whether it was the garam masala, ground coriander or turmeric I could taste but yuk, I couldn't eat it all and now have 4 more portions in the freezer! I used a full can of coconut milk along with the 100gm of block coconut plus pineapple and the juice but could not taste either. The pieces of pineapple could have been onion or mushroom, anything soft.
I will doctor the other portions and maybe make it again one day with half the quantity of spices and add a dash of curry powder.
TiaTia hi again. I just watched her make it again as I always record recipes I like on plus one. I noticed she did not add ground coriander in the filmed version but the written recipe called for it. I know a lot of people don't like it so am wondering if that was the unpleasant taste I got. She also whacked in loads of garam masala so I did same, made sure I fried them off for required time. I don't want to sound as if I know better than a professional but I think if I do it again I will add the pineapple and coconut block at the end of cooking in the hope that it will retain it's flavour. The one on tv was a nice yellow colour but mine ended up brown so wouldn't be surprised if it was the coriander and too much gm.
Footnote: I filmed a recipe from Sunday Brunch for cheese and potato pies and made them last week........They were a real success and will deffo make them again.
Lynibis That's strange how one recipe stated ground coriander and the other didn't and maybe your right, it made all the difference. May be worth trying to contact Nisha Katona and getting clarification. I will take a look at Simon Rimmer's cheese and potato pie...sounds very tasty.
zai thanks for the info. I must admit I was torn on which gm to buy as the tv lady said it has a mix of 20 spices and the choice in Sainsburys varied between 9 and 13. I actually like cinnamon, but does it go bitter in this type of recipe? I thought it was the coriander as I know lots of people do not like that. Do you agree the pineapple and coconut cream should be added at end, as it doesn't need to actually cook and then maybe it would retain it's flavour?
I will deffo try the dough ball tip, just flour and water?
Stir fry! Any meat you like, any veg you like. Throw in some noodles & sauce. I prefer just using soya or sweet chilli but many options available. It's quick, easy, healthy & tasty.

I got so excited to tell you about the curry I didn't think to mention the quickest, easiest meal I do. If you have a steamer put loads of new potatoes in bottom pan, loads of veg in middle pan and salmon in the top pan. When serving I am naughty and put loads of butter and grated cheese on my spuds!
If you need more food you can, while that lot is steaming, grill some tomatoes and mushrooms and corn on the cob or even just put in a pan and roast so you don't have to watch too closely.
It is a healthy but tasty meal.
i dont have a steamer. i always wanted one but wondered if they were worth the money? do you rate them ?
HollyDolly22 definitely. Indispensable for cooking fish which I do at least once a week. The rest of the week I do veg. The longer to cook veg like carrots/brussels go in the water in bottom pan and I put peas/sweetcorn/fine beans etc in the two steamers above.
I am not fussed to have a fancy electric one, just on the hob and they are not expensive. Food keeps it's goodness cooked this way.
Ps I even stab a tomato and steam with the veg.

Well after the vile curry yesterday I made a huge pan of chilli con carne today.......success, and that is another quick and easy meal to get together HollyDolly22
Stir fry is a good one, you can get a big bag of stir fry veg in most supermarkets, some rice and noodles and a sauce to go with it. Quick, easy and healthy and you can mix up the sauce you use to keep it interesting
Slow cookers are a good shout you can leave them turned on cooking whilst doing other things.
Veg and chicken are quite easy recipes
Stir fry, using the packs of stir fry veg the supermarkets sell. Try not to use the packets of sauce though as they often have lots of sugar in them.
