Self Navigating Walking Holiday in Europe

I am thinking about a short self navigating walking holiday in europe. Can anybody recommend one based upon the following:~
i shall carry my own rucksac, so not too strenuous terrain
accommodation in b&b / airbnb / simple hotels
say 4/5 days walking around 10/12 miles a day
within relatively easy access to airports
i can follow a map, but would prefer something like walking along a river/canal/coast line etc

Wait, you're planning on doing a walking holiday throughout Europe? Europe is a continent so it'd take you months or years to visit every country.

Russia is also a European country as Russians are Europeans themselves, while the country is also part of the Asian continent.
You really ought to reconsider it, if that's your plan.
