Stuffed Mushrooms - Best Ingredients?

What are the best ingredients I can put in stuffed mushrooms. I talking about the big portobello ones. I want to know what you have made and enjoyed not just recipes off the internet which I usually fail at.
I like stuffing mine with blitzed up gammon mushroom stalks garlic cheese chilli and thyme
Chopped crispy bacon, grated cheese, breadcrumbs. Fry unstuffed side in butter then pop under grill to cook top.
But you know what Shirley Conran said: Life's too short to stuff a mushroom!
It's a bit off topic but once had a vegetarian burger in a restaurant and all they did was stick a very large mushroom in the middle to replace the burger rather than any clever meat mimicking product. It was so rubbish. Don't get me wrong though love mushrooms normally but that didn't work at all. I almost complained that I was missing the burger until the sad fact dawned on me that the oversized mushroom was meant to be the burger. First world problems.
That is lazy catering. A real food chef would have chopped the mushroom and mixed with other ingredients like herbs, egg, breadcrumbs, onion etc and then shaped like a burger and cooked. Sounds like a case for Gordon Ramsay!
