The sprawling colours of a Caribbean sunset are captured in this decadent Dark Chocolate Rum Truffle Selector. Strong believers in the symbiotic relationship between rum and cocoa, we’ve taken a generous shot of rum and blended it into our dark truffle, giving you the richness of cocoa with the warmth of rum.
The rum we used - Chairman’s Reserve - is distilled just down the road from our St Lucia cocoa estate and they source their rich molasses from British Guyana. The small capacity of the distillery means they are committed to making an exclusive top quality rum, which we thought deserved a place in our rum truffles.
Our dark chocolate truffle is whipped with a touch of cream to temper the richness and give it a smooth, creamy texture. The rum adds a depth of flavour of flavour and a boozy kick to the decadent truffle, and we seal the whole thing in a perfect 70% dark chocolate sphere.
Our 70% dark chocolate is perfectly tempered for that satisfying snap, and melts slowly before releasing its satin-smooth, booze-rich truffle inside.
