These steaks are a French favourite – for very good reason!
Also known as beef skirt steak, Coombe Farm's organic beef bavette steak is, we think, a slightly under-appreciated cut. That might be because 'skirt of beef' isn't the most appealing name, so we prefer to follow the discerning French and call it bavette, meaning 'bib'. Taken from the thin muscle running along the flank of the beef carcass, bavette steaks are lean, with an open texture and bags of flavour. This is a really versatile cut that enjoys deserved popularity not just on the continent, but in the Americas, too.
