Organic Beef Hanger Steak
Known as ' butcher's steaks' – because butchers know quality!
It's a contradictory cut, the hanger steak. With its rich marbling and complex texture, you'd be forgiven for thinking it might be chewy. Actually, it's about as tender as beef comes. Coombe Farm organic hanger steaks are cut from the muscles that support the diaphragm on the side of the beef carcass. There's only one per animal, so traditionally they were seen as something of a perk for the butcher. It's a muscle doesn't really do much work, and rumour has it the name 'hanger' comes from the fact that the muscle just 'hangs' around. We're not 100% certain we believe that.
