Whole pineapples are roasted on a spit with Demerara sugar until they're gloriously caramelised, and they're then combined with a particularly bold gin, helping to cut through the sweet, toasty pineapple. Serve over ice, or with some Ting if you can get your hands on it.
Much like a fine wine, some sediment may evolve in the bottle over time. This is due to the natural interaction between the real fruit ingredients and the spirit, and does not affect the ever-evolving flavour of the gin. You can pour the gin off the sediment, or simply shake it in.
