Cut from the belly of the pork carcass, our unsmoked streaky bacon can be the main even in its own right, or a supporting ingredient in more complex recipes. To make it, we take belly pork joints and cure them in an age-old way unsing organic ingredients. The cure mix we use contains no chemical preservatives (so definitely no nitrates), just good old-fashioned sea salt plus bay, juniper and black pepper. The spices lend a subtle aromatic scent, while the salt draws moisture out of the meat, intensifying the flavour.
