Homemade Chips
Slice 2 medium Maris Piper potatoes into thin chips, leaving the skin on.
Spray the potato chips with low calorie cooking spray and add a teaspoon of mixed herbs, a pinch of paprika and salt and pepper seasoning, before shaking well to fully coat.
Add the chips to the Air Fryer and cook for 10 minutes. After 10 minutes, shake well and cook for a further 10 minutes until crispy.
Chicken Strips
Cut 3 chicken breasts into 1 inch strips. Mix together one cup of seasoned breadcrumbs, half a cup of parmesan cheese, 1 teaspoon salt, 1 teaspoon dried thyme and 1 teaspoon dried basil in a mixing bowl.
Crack an egg in a separate bowl and dip chicken pieces into the egg and coat in the breadcrumb and herb mix.
Place the well-coated chicken into the Air Fryer and cook for 15 minutes until cooked through and golden brown.
Egg and Rocket Pizza
Lay a tortilla across a baking sheet, brushing sparingly with oil before baking in the Air Fryer for 3 minutes.
Chop 1 roasted pepper and 2 tomatoes and mix with 2 tablespoons of tomato puree, a mixture of herbs and seasoning.
Turn over the tortillas and spread across the tomato mixture, leaving the centre free from any large pieces of tomato and pepper.
Crack an egg into the centre of the tortilla and place in the Air Fryer for 10 minutes – the egg should just be set and the tortilla should be crispy around the egg.
