Before you join the Gin Drinkers Society (meet the other members here), here's a tip. A pallet is the wooden platform your crates of gin are stacked on for home delivery. Whereas your palate will tell you whether your beer is musty, whether your wine is corked, or whether your gin has any tonic in it. Get this wrong at the GDS and they make you drink a pint of gin, neat, without taking a breath. If you fail, fall over, are sick, burp, or can no longer see straight, you have to pour the remainder over your head, and it's your round. Hick!
