Anyone Have a Good Chicken Curry Recipe They Can Share Please?

I have made countless curries over the years and have yet to find one to suit my taste. I search for recipes and add various other ingredients like mango chutney, dessicated coconut or coconut milk, sultanas. I have tried authentic curries with a variety of spices but no curry powder or those with curry powder.

I like medium strength, fruity, sweetish, but with a bit of a kick and with a good consistency which is neither too runny or too thick, can anyone recommend? Thanks.

I love curries and i used to make my own, but cheated using a shop bought sauce , using mainly chicken as the main ingredient

I used to like icelands own sauces , better value than the more well known brands and bigger

But you cannot beat a restaurant curry , the closest to a home made , but with their culinary experience and ingredients

The problem is they are so expensive now

There are loads of suggestions on the internet L , spoilt for choice, its just finding the best one

telmel yep, your last few words says it all. The one I've done today I think I overdid the chilli and am wondering whether to add some coconut milk. I worry that when I do this I keep veering away from how the recipe should taste. I think I am guilty of too much doctoring!

If you have the following on hand then you can make a good curry: Tinned or fresh tomatoes. Onions. Garlic. Ginger. Fresh Coriander & Yogurt. For the spices: Cumin. Turmeric. Ground Coriander. Fenugreek Leaves (Methi). Curry Leaves. Kashmiri Chiili & Garam Massala. And of course your Meat. A good curry needs Mango Chutney, Raita (Yogurt with Cucumber). Lime Pickle & Onion Salad (Onions with Mint Sauce). You dont need those shop bought products. Better homemade.

Marinate your meat with Turmeric, Kashmiri & Yogurt. Fry you meat for a while then take them out. Fry your onions then add the Garlic & Ginger. Add to that your spices & Curry Leaves. Let the spices release their oil then add the tomatoes. Add back In to It your meat. Throw some Methi In. Let it simmer on low to medium. Adjust by adding water If too thick. Keep tasting. I normally add 1 heaped teapoon of spices. Maybe two on the Kashmiri depending on If I want It hotter. Add the Fresh Coriander towards the end.

Emerge11 thank you so much. That is quite similar to the one I made today but I know even the slightest variance can alter the taste, the only things I didn't have are curry leaves, kashmiri chilli, and Methi. I didn't have any yoghurt as I only usually buy flavoured types and I absolutely can't take the lime pickle, the only time I tried it I nearly lost my head!

I think I may tone down the one i've made with the coconut milk for now and see what happens but I will cut and paste your recipe into my online recipe folder, thanks again.

Lynibis Yes the Lime Pickle Isnt for everyone. Try natural Yogurt next time, some for the Curry then make the Cucumber Raita with the reminder. Add fresh lemon juice In It If Its too plain for you.

I like Bombay Potato too. Easy dish. Potatoes, Tomatoes, Tomato Puree, Garlic, & Onions. For your Spices: Garam Massala, Cumin, Black Mustard Seeds, Ground Coriander & Turmeric. Par boil your potatoes with Turmeric. Take them out. Fry your Mustard Seeds first then add your onions & garlic. Then add your Spices then add back In your Potatoes. Near the end add your Tomatoes. Thats It.

For Chinese: Mayflower Curry, onions, chicken & peas. Easy - Peasy. Make the Curry. In another Pan fry the onions, chicken then add both to your Curry. Then throw In frozen Peas

Emerge11 oh wow, I love Bombay potatoes. Again, so many different recipes, the easiest I do is to cube almost cooked potatoes and fry them with chopped onions in a curry paste of your choice and a little water to loosen up.

I honestly wouldn't have a clue as I only get Currys from my local take away would love to make one from scratch tho so I'm liking this topic

Leannexxx if you wanna start easy why not get one of the jars of curry sauce. Not as good as takeaway but you can then progress to the curry paste and there would be lots left for some Bombay potatoes, instructions are on jar. Grab some sides from supermarket, naan bread and hey presto😋

I’ve never made one from scratch but mum just bought the chicken and chopped it and used a jar of Starwood’s curry sauce with rice. I know it’s cheating but we only do quick fuss free cooking really.

Caribbean curry powder from m&s is lovely to make a curry.

I do mine in slow cooker on low for 6hrs roughly

Chicken or any meat like, diced up

Coconut milk x1

Caribbean curry powder two heaped table spoons

Chicken stock or whatever meat used that stock

Add chopped onions and diced potatoes or butternut squash cubed.

Leave to cook then serve with rice and mango chutney ,nan bread and poppadoms

Daffodil90 that sounds really cool will definitely try that, I do love potato in curry. Might even chuck in some chopped pineapple.
