I've been making my version of a Portuguese tart - vanilla custard filling in a sweetened puff pastry case. They are traditionally made with eggs but I've substituted it for a powdered custard mix that I add a vanilla pod to and then bake. It's quick and doesn't have the jellyish egg custard texture and no nutmeg. It is a real cheat that is quick to make.
