Easy Baking during COVID-19?
Ask a Question
I would really like to get into baking during these troubled times for a bit of a distraction. Does anyone know anything easy to bake with minimum baking materials as I don't want to pop out especially given the lock down. Many thanks and stay safe.
Hi studentgirl123 This is one of the first things my Nana showed me how to make -
Rock Buns Recipe
- 225g Self raising flour
- 100g Marg
- 100g sultanas/raisins (or coconut and cherry OR white chocolate and cherry. 100g of your flavour combo)
- 50g caster sugar
- 1 egg
- dash of milk
Method
Heat the oven to 200°C or gas mark 6.
Grease 2 baking trays.
Rub together the flour and marg until it’s a bit like breadcrumbs.
Stir in the fruit./chocolate/flavour and sugar.
Mix to a dough with the egg and the milk.
Place in heaps on trays and bake for 10-15 mins.
Details can be found at https://www.be-ro.co.uk/Be-Ro/media/downloads/Be-Ro_website_recipes.pdf Brownies p50, Drop Scones p53, Maids of Honour p55, all relatively easy. The Be-Ro book at £2.99 is well worth it.
Ive still got my late mams old original be-ro book.well-used & dog-eared but still recipes are good.
What about a Fruit crumble, simple to prepare and tastes delicious
3-4 Bramley cooking apples or fruit of choice
100g granulated sugar
150g plain flour
75g salted butter, softened
- Peel, core and chop the apples into chunks place in a saucepan, add another 2 tbsp of water and half of the sugar, and place on a medium heat on the hob. Stew until the apples become mushy.
- Place the flour and the remaining sugar in a mixing bowl. Add the butter and use your hands to mix everything together until the mixture resembles large breadcrumbs.
- Place stewed apple in oven proof bowl and sprinkle breadcrumb mix over the top .
- Bake in a pre-heated oven 180C for approx 30 minutes or until top is golden brown.
- Serve with lashings of custard, fresh cream or ice cream
Thank you, never thought of a crumble and have a few apples spare so will be doing this tomorrow!
Going back to my army days, crumble was always served in the mess iit came in the large aluminium trays and scooped out with an aluminium spoon, happy days
No bake cheesecake? Biscuits or cornflakes as a base then some philadelphia/cream cheese with chocolate spread or sugar, and vanilla extract for flavouring
My other half made shortbread the other day. I have no idea what the ingredients are but it didn't require a lot.
Thank you everyone, some really delicious. Think I will start with the crumble tomorrow and move on to the rest in the future weeks
We often just poach apples or pears slowly until soft add a bit of sally (cinamon) and serve warm with cream or custard
I am thinking of what to bake next, will probably go for cheese scones again. It is harder to get the ingredients though! I thought that Sainsburys had declared that they had no stock problems any more
tumblespots I felt the same about the stock situation but read, at the weekend, that it's not the production of items but the packaging of them. This explains why there is no flour to order online - all available packs are in store.
flapjacks are easy and cup cakes.
my sisters been making rock buns lately too.
also i think making pies are easy
Choc krispies bars: Melt chocolate in a bowl over a pan. (We use mars bars), Add corn flakes or rice krispies. That easy!
Banana bread: I use this Mary Berry recipe https://thehappyfoodie.co.uk/recipes/banana-loaf
But I also add tablespoon honey & some cinnamon. The older the bananas the better too.
what we call 'breezeblock' cake (builders will know) take equal quantities (eg 100g of each item) of hard marg, toffees (wrappers off) marshmallows and heat in pan until all mixed, remove from heat and add same quantity of rice krispies, press into swiss roll tin and cut into fingers when set.
Chocolate brownies are so easy and delicious. Also, you can never go wrong with basic fairy cakes.
