What Do You Batch Cook?

Looking for ideas as now trying to batch cook more often. I have a few staples but want some ideas on your go to recipe that are suited for batch cooking.
I am veggie though..
Stews and soups tend to freeze pretty well i find. If you get them out a good few hours before eating you can let them defrost at room temp and it tastes better
I don't batch cook but I freeze things like meat in portion sizes so it's easier to defrost. I look for reduced tomatos or tomatoes off olio and get them. I cook them down for pasta sauces or lasagne. I've been getting herbs off olio and drying them to use at a later date
I don't batch cook as such, but I plan my weekly menu carefully, so that the ingredients from one day follow into the next, for example I will do a spag bol on a Tues followed by Sheppard's pie on a wed, that way I can prep the pie on the Tues when I make the spag bol, and put in in the fridge for weds, so its ready and waiting when I get in from work. Same with roast dinner on a Sunday is always followed by a pie or stew on a Monday made with all the left overs from Sunday roast, I'm sure the same system would be workable with veggie meals, I have a whiteboard up in my kitchen, I sit down on a Tues(my day off) and plan my weeks worth of meals on there, making sure to plan meals that use up anything in fridge that needs using, and writing a list of anything I need to get from shop, it really helps to stick to budget, less food waste, and I don't have the headache of deciding what's for tea on a daily basis
I have been batch cooking the meat for spaghetti bolognaise for years, my son eats it about three times a times so only takes ten minutes to cook.
I only batch cook lasagne and bolognese as both freeze well. Easy to substitute the meat for plant-based (I mainly eat plant-based and would substitute meat for hearty vegetables like butternut squash, sweet potato, swede, parsnips and carrots)
I do a lot of batch cooking. Mostly things like Chilli, Spaghetti bolognese, Meatballs and Cottage pie also curry, bubble and squick. I really enjoy it
Hiya InaShah . Sadly I'm not a veggie but 1 thing that I'd recommend is if you live local to food markets then `1 thing me and my wife have done is I will go to in my case Birmingham fruit and veg market and we go in there with between £15 - £20 and that will normally last roughly 7-10 days and this would really help you in terms of creating some fantastic meals from the foods you can pick up .We don't tend to just buy the fruits and veg that you can pick up at our local supermarket but we do find buying some of the fruits from the Carribean and where we would be different is I then do go to the fish and meat market and the dinners we have had have been truly beautiful and enjoyable .
