How to make a curry and what ingredients do I need as I have no idea about spices

Ingredients /Preparation

2 large chicken breasts – diced

2 large onions –diced

2 large carrots – diced

2 large potatoes – diced

1 large sweet potato – diced

About 2 inch slice of either or both Swede or butternut squash – diced (if in house)

Soak 2 tablespoons coconut in 500ml milk

Small handful sultanas

Dessert spoon of Schwartz curry spices

Dessert spoon sweet mango chutney OR teaspoon vinegar and dessert spoon honey or maple syrup

Method

Heat a deep pan with bottom covered with a little oil

Add chicken and brown

Add onions and spices cook for 5 mins

Add veg, sultanas and milk – gently simmer until chicken cooked and veg soft

Sir in chutney or alternative

Thicken if necessary with thickening granules

This is sweet potatoe curry I make frequently

Ingreds:

2 or 3 large chopped sweet potatoes

2 chopped onions (I use red)

Large chunk Spinach

Can of chopped tomatoes

Can of coconut milk

Can of chickpeas. (Wash them first)

1 tsp of each spice:

cumin

turmeric

chilli powder.

Plus a garlic clove, some grated ginger & a lime.

(Alternatively instead of using those 3 spices, just use a curry paste.)

Par boil potatoes & drain.

Fry the onion in a little oil until soft in a large pan, then add the garlic, ginger & spices, Mix & leave for a minute of so.

Add & stir together the cans of tomatoe, & coconut with the onion & spices.

Add the potatoe & can of chickpeas.

Add some water or stock if consistency is too thick.

Leave to simmer for about 20 mins.

Add spinach & leave to wilt. Squeeze in lime juice. Mix & serve.

You could always add some chicken or lamb at the beginning with the onion too, if you prefer some meat in.
