HollyDolly22 my pastry is always hard. I cheat and buy the jusrol prepackaged pastry then buy some mincemeat and add some chopped cherries and a little sherry just a teaspoon and pour yourself one while you supervise the children making them.

Same here you can’t go wrong with the quality of Waitrose, for Me it’s not always about the cost it’s about the quality of the food for your money.

I will nip to Tesco and buy their finest mince pie's, they taste lovely and probably much cheaper than making them myself.

I've never made them - I prefer buying them because it's easier. 😂

This is a small part of my mince pie bake that I do every year for friends and relatives. Thought I would get away with it this year but still have half dozen requests. I make normal, frangipane, crumble and Viennese

BORDERJOE thanks for the compliment 🤗

Nearly all my friends want the frangipane ones and tbh they are easier to do as you just bung a dollop on top of the mince, sprinkle the almonds and bake. No lids, brushing and sprinkling required.

Lynibis Thanks for that ...I wondered about them being easier ...am off to look up 'frangipane' next ...once again LD is helping me discover....😊

BORDERJOE lol it is the filling you get in a Bakewell tart. Made with ground almonds, butter, caster sugar and eggs with almond essence to taste. when cooked you are meant to glaze the top with melted apricot jam but I don't keep jam in the house so I don't bother!

Lynibis Thanks once more!!! Bakewell tart is my favourite when we go out but have never made one.... I didn't get to Google frangipane as I was sidetracked so thanks for this x

The only tips I could give would be to use more butter than usual. pastry is usually half butter to flour but I use a 9oz block to 16oz flour, the pastry will have a slightly greasy feel to it but will make a lovely 'short' crumbly pastry when cooked.

Make sure you use right size cutters so lid can fit and seal after using your finger to moisten round edge of lid with water before pressing firmly but gently onto filled case, don't overfill.

Brush each pie with milk or beaten egg, sprinkle with sugar (I use demerara or golden caster) and don't forget to poke with a fork to make holes for steam to escape.
