Best Way You Use Leftovers from Dinner?

What is the most ingenious way you have used up leftovers from dinner? Have you made a broth with roast dinner leftovers or pies perhaps?
I make chicken bones soup from roast chicken bones. There's still a bit of meat on it and i add carrots, herbs, and small pasta, or i do an asian version with ginger, lemongrass, chilli paste and noodles. Yum
One Christmas I had an awful lot left over so rather than throw it away I made curry and a pie with it and put all the veg with a veg stock cube and a good dose of curry powder and made soup.
In my family, we usually leftover food and make a sauce and cook some rice or potatoes to tho with it. With fresh vegetables, they usually go off quick but we make a vegetable soup out of it
When I was first married (early 70s) money was short and we used to have roast chicken on Sunday, I would make a chicken pie on Monday and then use the carcass to make a stew on Tuesday. People don't seem to use leftovers so much now and food waste is rife.
Yes so true, my leftover chicken soup is actually sometimes better than the roast itself so i wouldn't throw the carcasse away.. People waste a lot of food nowadays. Some unwanted food sometimes ends up in my front garden, mc donalds half eaten burgers or similar just chucked wherever as people can't be bothered to look for bins (i do have 3 bins in my front garden btw) sorry, off subject but it's a pet peeve of mine. Littering. On other people's property.
Not surprised. Roasted chicken sold in U.K. stores tend to have a "rough" taste so almost anything is better than that. gaelle0501
If I have spare from a meaty casserole I always mix in a raw chopped onion to freshen it and put a crust on the top. Sometimes day two casserole tastes nicer anyway
