What is the best way to clean Mushrooms?
I hear it is best not to wash Mushrooms as they absorbs water
This what I do with mushrooms Just give them a brush over just to remove the dirt. Then they are ready to use.
What type of Brush do you use? The brush I have is too soft and does not remove any of the dirt
Just wipe them over with a piece of kitchen towel - there's a lot of flavour in the skin and I can never understand anyone peeling them before using. You are right - don't wash them.
Why is absorbing water a bad thing? The water would cook off anyway. I always wash mushrooms as they are covered in dirt - I don't want to eat chunks of soil. I don't peel them though, unless a bit of skin accidentally comes off, but when that happens it's only a little bit.
If you've ever dry fried sliced mushroom for a recipe ( say, quiche) and put them to one side you would notice that they are very little body and mostly water so to wash them is to dilute the flavour. Ten minutes after frying and leaving to cool, you can literally pour the liquid from them.
angemski How does it dilute the flavour though? And how else are you meant to get dirt off them? Don't fancy eating soil.
angemski you've got me reading up on it now. Just read this which was fairly interesting, but I think I'll still keep rinsing them - doesn't seem to make much difference.

MeestairChrees Thanks for taking the time to look further - I'm a bit the same and not prepared to take blanket statements. I've always been a little impressed by Heston and his science so this was a surprise. I regularly grow mushrooms in kit form because I love them - the growing medium is pretty standard in commercial set-ups so I'll continue to 'wipe'. ( 'Most mushrooms are not grown in manure but rather in dirt under a layer of peat moss.') I don't dispute that button mushrooms don't absorb a great deal of water but the same can't be said of flat mushrooms with gills. I adore mushrooms but can't stand them when they are overly soft and slimy so perhaps it's a personal cooking preference. Again, thanks for your input. Potatoes.....skins on or off...... No! just kidding.

Don't wash chicken! You will spread Salmonella and all sorts around your sink if you do. (Impossible not to splash so spreads the possible bugs even further) Cook it straight from the packaging and stay safe.
youre not meant to wash it- I know! You just make sure its properly cooked through as they found that people washing it actually smeared the bacteria around the kitchen via hands board water towel etc and themselves without realising with no chance of it being seen off by high temps ie cooking so....just cook it! This poor women ended up with salmonella capable bugs in her hair (cringe)
