Easy Cupcake Recipe?

Does anyone have a simple cupcake recipe? I am not very good in baking - but when it needs to be done then something simple haha

125g caster sugar
125g butter, softened (or margarine)
125g self raising flour
1tsp vanilla essence
2 large eggs
Cream the butter and sugars together and add the vanilla. Mix the eggs and flour together and then add all the mixture together and beat. X
This basic recipe is great and you can easily add things like cherries or dried fruit, raisins, sultanas to the recipe. Also add less flour and make up with coca powder for chocolate cakes. Once finished easy to decorate with icing and choose a topping of sweets or mini biscuits. Butterfly cakes are also very easy. Same recipe, once finished slice of top add some butter icing, cut top in half put back on cake as wings. Easy to make recipe into lemon cakes as well.

I find that even following the best recipes I normally mess them up lol, if your as bad as what I am you might be better off using the ready mixes! I love the Jane Asher ones from home bargains x
