Lots of Potatoes - Recipes Please!

Does anyone have any good recipe for potatoes using things I can get hold of ie. Potato cakes no longer option as no flour?

What about some corned beef or cheese and onion rissoles?

All you need is potatoes, onion, egg, breadcrumbs, parsley and corned beef or cheese.

I made a tortilla yesterday - I couldn't call it a traditional Spanish one because I always put ham/bacon in it. (heavy on the onions) It's a really good way to use up a glut of potatoes.

Been watching a lot of Come Dine with me during lockdown and amazed the different things they do with potatoes. The most popular being dauphinoise potatoes but also had garlic butter potatoes, Rosti and duchess.
