Yorkshire Pudding Secrets!

Ask a Question

Ok its sunday your doing a roast what's your Yorkshire pudding secrets, I follow James Martin's way but anyone else do anything crazy.

James' Yorkshire Pudding recipe is legendary! Good quality ingredients are essential, try and buy the best flour that you can. The secret to getting gloriously puffed-up Yorkshires is to have the fat sizzling hot and don't open the oven door!

Ingredients

200g plain flour

3 eggs

300ml milk

4 tbsp vegetable oil

Method

Put 200g plain flour and some seasoning into a large bowl, stir in 3 eggs, one at a time, then slowly whisk in 300ml milk until you have a smooth batter.

Chill in the fridge for at least 30 mins or up to a day.

Heat oven to 220C/180C fan/gas 7. Pour 4 tbsp vegetable oil into the holes of a 12-hole muffin tin, then heat the tin in the oven for 5 mins.

Carefully ladle the batter mix into the tin, then bake for 30 mins until well browned and risen.

We always buy a packet of Tesco batter mix 31p , add an egg and water, chill in the fridge for an hour then cook in a pre oiled hot tin , and they are really good.

am tempted to have a bash.... just don't fancy an oil splashed oven ... I've been using Auntie Bessies Yorkshire Puds frozen - the really large ones.

I have watched JM do them twice recently and the recipe you use is not his as he uses 8ozs flour, 1 pint of whole milk and 8 eggs. He also uses lard or dripping although he said oil is ok.

TiaTia more likely other folk using them and making them slightly different so they don't get into plagiarism trouble. But if a recipe works it's good. I haven't made them for years and 8 eggs sounds more like a baked omelette to me!
