Charming Goatcheese&Chickpeas salad with Couscous (vegetarian)

Charming Goatcheese&Chickpea salad with couscous (serves 3, ready in 10 minutes)

Ingredients:

1 pouch packet of Annabel Charming Chickpeas, 175 g couscous, 125 g goat's cheese, 1 avocado, handful of almonds, 100 g pomegranate seeds, Olive oil, 1 tbsp lemon juice, Pinch of salt and pepper

Preparation

Prepare the couscous according to the instructions on the pouch packet and leave to steep.

Coarsely chop the almonds.

Mix the olive oil with the lemon juice and season to taste with salt and pepper.

Halve the avocado, remove the stone and cut into slices

Gently mix the "Charming Chickpeas" with the couscous while adding the dressing.

Decorate the couscous salad with the avocado slices, goat's cheese, almonds and pomegranate seeds
